The Sinking Chocolate Cake

This is another one of my childhood favourite recipes and I remember asking for this “cake” for my birthday more than once. It is absolutely delicious and definitely a kid friendly recipe to make.

This recipe is literally made to flop. Yes, it is supposed to sink in the middle once removed from the oven.

The filling for this recipe is completely up to you, you can use your choice of instant pudding (I enjoy Moirs instant white chocolate mouse) or you can use my recipe for three ingredient mouse which is truly delectable and goes great with this recipe.

The Sinking Chocolate Cake

Ingredients
  

  • 5 Eggs
  • 1 Cup Sugar
  • 1 Tbsp Self-raising flour
  • 4 Tbsp Sifted unsweetened cacao powder

For the filling

  • 2 Cups Cream
  • Your choice of instant pudding or my mouse recipe

Instructions
 

  • Preheat the oven to 180°C and grease a 20cm cake pan
  • Separate the eggs, keep the eggs yolks aside
  • Beat the egg whites until stiff peaks form and add sugar slowly while mixing until just combined
  • Lightly fold in the egg yolks
  • Sift the dry ingredients and fold into the mixture
  • Bake for 25 minutes. Leave to cool before adding in your filling.

For the filling

  • Only make the filling when "cake" has completely cooled down
  • Beat the cream until stiff and add your choice of instant pudding
  • Scoop your filling into the "cake" and place in fridge to set for at least one hour
